This blog was originally started to track our progress as we regenerated a derelict Victorian house in Dublin. We turned an old crumbling ruin in to our dream house! If you wish to read through the trials and tribulations of the house build it is best to start at the oldest blog post and read in date order. The blog then evolved in to being all about my life in Dublin, Ireland and then life in Malaga, Spain with artist "PIGSY" and now back in Dublin
I hope you enjoy reading it!
So I'm back on keto for awhile now and am always looking out for new tasty snacks.
Today in Supervalu while getting some strawberries and cream, I spotted these "Cheese Os"
I snapped up a packet and tasted them at home.
My verdict is that they are pretty good. Extremely cheesey and very moreish. They taste like Cheese Whisps which I had on a recent trip to the States to visit my sister.
All in all a tasty snack and that's low carb and could make a keto snack depending on your metrics. Interestingly they are Irish made and I am noticing more Irish low carb products coming to market (Hello, Scratch my pork) which is great to see.
Hope you enjoy them too!
Ingredients: Cheddar Cheese
Nice and fatty with low carb
Available in lots of different flavours - see the Cheese O Website
After spending the afternoon in the city doing a little bit of clothes shopping, I decided that I would make Keto Chicken Nuggets for dinner. So after finishing up my shopping I got the Luas home and stopped off in Supervalu to buy a few ingredients I needed. Unfortunately when I got home I realised that I had no eggs at home so I had to return to the shops to get some - for this trip I cycled on my bike which only takes a few minutes.
Clothes Shopping
Speaking of shops and shopping you are probably wondering what clothes shopping I did. Well, the reason I went to town was that I saw a nice black jumpsuit online in Mango that I thought would be perfect for the next PIGSY event. However, when I saw it in actuality and tried it on, it wasn't exactly right. So I headed on to TK Maxx and I bought a Fat Face dress there and also a silver jumpsuit. Then I went on to Zara where I bought a pair of black trousers along with a pair of navy work trousers in Dunnes Stores.
Anyway enough about clothes shopping, here's the pic of the Keto Chicken Nuggets that I made from this Keto Connect Recipe. I added a little cream cheese to the recipe which I felt would make them more moist.
Keto Chicken Nuggets
The Keto Chicken Nuggets were a great success and both of us tucked in to them along with a mayonnaise and hot sauce mix. However, I will say, tasty as they were, there was a lot of palaver to make them. It probably is not worth making these regularly - unless you need to feed them to children who are missing regular chicken nuggets. For me, I think I would have enjoyed chicken stuffed with something like peppers and onions fried off and then mixed with cream cheese and some Cajun spices just as much......that might be something I will cook this Sunday!
My Keto journey can be up and down and sometimes I have fallen off the wagon over the last 7 years of following the Ketogenic Diet (probably what I do can be described as Dirty Keto diet). I follow Serious Keto and I find his story really helpful for staying committed. Have a watch here - there are 5 videos but all are worth watching. Going keto for him was life changing.
I had a hankering for a chilled out evening on Thursday as I was off on Friday so I made keto pizza! Here's the recipe I followed from Diet Doctor
It was a big success with both Ciaran and I agreeing that it tasted really good.
I doubled the recipe so made two - guess it will be pizza night again tonight!! I used Janet's Pizza Sauce (available in Supervalu) for the pizza and topped with both cheddar & mozzarella cheese along with pepperoni, bacon & chicken.
This is the almond flour that I used - almond flour is pretty much ground almonds.
When you are buying your almond flour be sure and do a good price comparison. One of these ground almonds was €9.95 per kg while the other was a whopping €32.90 per kg!!!
