"Lost in Thought" is open!

Ranelagh is alive!

PIGSY's "Lost in Thought" is on show.  The exhibition opened with a bang on 21st of April and you can read all about the opening here on PIGSY's website.

Next up is the finissage event on closing night of 5th of May.

And if you aren't able to get to see the show sometime this week before it close on Friday, you can check out this video below (starring moi (!), and PIGSY) all about the show.

Other than PIGSY art, my latest obsession are something that I found in my local Supervalu store.....they are an Irish product called "Cheese O's"

Made from Irish Cheddar cheese they are basically dried cheese puffs with some flavouring. I've tasted the plain version and the sweet chilli version and both are great. They are low carb (I'm back on keto) and high protein so they fit perfectly with my current lifestyle and diet.

They are so good that I went on to the Cheese O's website to check out the other flavours and ordered a variety box. I'll report back on the different flavours when I get that delivery!

You can check out the Cheese O's website here for info.

Made by a company called Dairy Concepts and based in County Cork I expect my Cheese O's will arrive quickly in a few days. I ordered them yesterday but today was a Bank Holiday in Ireland so the order probably won't even get processed until tomorrow........either way I don't mind when they arrive but I am looking forward to tasting all of the varieties.

Keto Friday

Friday Funday

After spending the afternoon in the city doing a little bit of clothes shopping, I decided that I would make Keto Chicken Nuggets for dinner. So after finishing up my shopping I got the Luas home and stopped off in Supervalu to buy a few ingredients I needed. Unfortunately when I got home I realised that I had no eggs at home so I had to return to the shops to get some - for this trip I cycled on my bike which only takes a few minutes.

Clothes Shopping

Speaking of shops and shopping you are probably wondering what clothes shopping I did. Well, the reason I went to town was that I saw a nice black jumpsuit online in Mango that I thought would be perfect for the next PIGSY event. However, when I saw it in actuality and tried it on, it wasn't exactly right. So I headed on to TK Maxx and I bought a Fat Face dress there and also a silver jumpsuit. Then I went on to Zara where I bought a pair of black trousers along with a pair of navy work trousers in Dunnes Stores.

Anyway enough about clothes shopping, here's the pic of the Keto Chicken Nuggets that I made from this Keto Connect Recipe. I added a little cream cheese to the recipe which I felt would make them more moist.

Keto Chicken Nuggets

The Keto Chicken Nuggets were a great success and both of us tucked in to them along with a mayonnaise and hot sauce mix. However, I will say, tasty as they were, there was a lot of palaver to make them. It probably is not worth making these regularly - unless you need to feed them to children who are missing regular chicken nuggets. For me, I think I would have enjoyed chicken stuffed with something like peppers and onions fried off and then mixed with cream cheese and some Cajun spices just as much......that might be something I will cook this Sunday!

My Keto journey can be up and down and sometimes I  have fallen off the wagon over the last 7 years of following the Ketogenic Diet (probably what I do can be described as Dirty Keto diet). I follow Serious Keto and I find his story really helpful for staying committed. Have a watch here - there are 5 videos but all are worth watching. Going keto for him was life changing.

Back on the Keto train!

After the excesses of Christmas I am back eating Keto.

I got straight back in to making Keto bread which is beyond easy to make. Basically you just mix up the ingredients in a bowl and then bung it in a tin and in to the oven for 45 mins.

The ingredients for this Keto Bread are:
Half cup coconut flour
Half tsp baking powder
6 eggs
Half cup melted butter
Some salt to taste
And then I add chili flakes too!

I've been making the tastiest tuna melts for dinner on this bread. I layer avocado, tuna & mayo and then melt cheese on top. Delicious!

But personally I think this bread is best toasted in the oven and then slathered with Kerrygold butter.

So breakfast this morning I had Nespresso coffee with cream and then some Greek yoghurt with added cream.
My new find is this Greek yoghurt from the Tesco Finest range. It's delicious! It's been strained so it is really thick and creamy. Previously I enjoyed the Lidl Greek yoghurt but this is my new favourite.

I like to add cream to my yoghurt. It adds fat but it also takes down the sharper taste of the yoghurt if it is not quite to your taste.

I feel so much better eating this way. Not eating sugar gives me more control over my eating and stops me acting like a Sugar Monster!!
