Foxy!

I met my sister for coffee after work tonight and then took a lovely stroll along the canal.

After that I dropped my sister to the station for her train. Amy was a little early so we sat and chatted up the road from the station. Suddenly we saw a fox run across the road and then disappear in to the bushes. A fox in Dublin City!!! Amazing! What a great sight.

It's bright!

It is a lovely bright day in Dublin (but deceivingly cold). I snapped a pic of Christ Church as I drove to work. The sky is a gorgeous blue colour.

Belgian Truffles

Have you ever tasted authentic Belgian Truffles? We are lucky to have a Leonidas Chocolate Shop in Dublin.

My sister and I popped in for a sweet treat last week. We each had the delicious fresh cream coffee flavour "Manon"

I told my sister about my trip to Belgium about a year ago and how just about every third shop is a chocolate truffle shop!!

Word of the day: Popover

What's a "Popover"?, you might ask, if you are English or Irish.....

Last night I heard that a Popover is an American food item that is something similar to a Yorkshire Pudding and is served with roast beef.  One difference I can see is that the fat from the beef is put in to the baking pan when making Yorkshire Puddings.  This causes a dip to develop in the pudding - perfect for loading beef & gravy in to!

Another difference is that it seems the popover can be served alongside sweet accompaniments.  The Yorkshire pudding is only ever served with savouries.

I quite like the word "Popover"........I think I will call my Yorkshire Puddings (from the freezer) popovers!

All chocolated out....

After Easter and a LOT of chocolate it is back to my soup diet. Today I made a big pot of veggie soup which I will take with me to work all week for lunch.

I oven roasted peppers, onions, carrots and sweet potatoes while cooking broccoli in the stock. It all gets added in to the pot and blitzed up. If it is too thick extra water can be added - or even a tin if tomatoes. Delicious!

I'm also trying to eat more protein and less processed carbs so I had a salmon fillet with lemon pepper for my dinner. I'm on a 2 month countdown to when I will be back in my bikini in Key West, Florida. Woo hoo!!
