Saturday Night - Keto Pizza in Ranelagh

 We are expecting cold weather here in Ireland, with the arrival of what is being called an "arctic snap". For the past few days it has been fairly windy and stormy, and cycling home from work yesterday evening was one of the worst - no rain, but bitterly cold. Luckily its a short 10 min cycle from the train station.

When I did eventually get home and got in and got warm, I set about making dinner of Keto pizza. As per usual for this time of year, I am back on low carb along with Intermittent Fasting. The IF is working really well and to be honest I don't miss breakfast or lunch and generally only eat in the evening time.

The pizza turned out great - I covered the top with cheese but be assured, it is loaded with pepperoni under all of that cheese. If you want to make Keto Pizza the recipe is linked here on my blog.

As well as making the pizza I filled bowls full of slow cooker bone broth and popped them in the freezer when cooled. Again with the cold weather, I will be glad of the broth, over the next few days and will probably make some hearty soups with the bone broth as a base.
After dinner, I watched possibly the last of the Hallmark Christmas movies until next Christmas. It was called "Haul out the Holly" and in fairness it was funny and gave me a good giggle in parts. On Friday I noticed a tree still up and lit in the neighbourhood which was nice to see. So nice that I took a pic!
I'm sad to see the end of Christmas really and thinking about it as I was prepping this blog, got me thinking that I really didn't listen to enough Christmas songs over the season.
So I pulled up The Pogues on Youtube and had a listen to "Fairytale in New York". This of course took me down a youtube rabbit hole. After seeing Matt Dillon in the opening scenes, I then went on to look at him and Annabella Sciorra in Mr Wonderful and then went and looked at her in the Sopranos.......and so on - that's what happens with youtube, isn't it?!

Keto resources from the library

Since I returned from hols I have been back on a strict Keto diet. It was definitely needed as I think I would have turned in to a Key Lime Pie if I ate any more!!

As well as eating keto, I am drinking LOADS water. The minute I get up I drink 2 huge big glasses of water and this really sets me off on good drinking habits for the day.

Here's a selection of books that I got from the library. They have a huge selection on the online catalogue and this lot that I selected are really good with loads of excellent recipes.

If you are on the ketogenic diet, have a look in your library to see what you can borrow rather than buy!

Since starting back eating Keto, I've been having the most amazing sleeps. I am sleeping for 8 hrs solid and waking so refreshed for the day ahead.

Back on the Keto train!

After the excesses of Christmas I am back eating Keto.

I got straight back in to making Keto bread which is beyond easy to make. Basically you just mix up the ingredients in a bowl and then bung it in a tin and in to the oven for 45 mins.

The ingredients for this Keto Bread are:
Half cup coconut flour
Half tsp baking powder
6 eggs
Half cup melted butter
Some salt to taste
And then I add chili flakes too!

I've been making the tastiest tuna melts for dinner on this bread. I layer avocado, tuna & mayo and then melt cheese on top. Delicious!

But personally I think this bread is best toasted in the oven and then slathered with Kerrygold butter.

So breakfast this morning I had Nespresso coffee with cream and then some Greek yoghurt with added cream.
 My new find is this Greek yoghurt from the Tesco Finest range. It's delicious! It's been strained so it is really thick and creamy. Previously I enjoyed the Lidl Greek yoghurt but this is my new favourite.

I like to add cream to my yoghurt. It adds fat but it also takes down the sharper taste of the yoghurt if it is not quite to your taste.



I feel so much better eating this way. Not eating sugar gives me more control over my eating and stops me acting like a Sugar Monster!!

Sugar is poison!

"Sugar is poison!" 
 
That's my current mantra as I tuck in to my Low Carb High Fat diet.
 
For breakfast I had scrambled eggs made with butter along with a cup of coffee with cream.
 
Here's a pic of my lunch.  Tuna from a can (in oil) with full fat mayonnaise and another cup of creamed coffee.

Dinner was a chicken fillet cooked in butter with broccoli cooked in butter along with ice berg lettuce with blue cheese and a blue cheese dressing - all so tasty!


After dinner I had a snack of Melted Cornish Cruncher Cheese with cider from Marks & Spencer - this tasted incredible!!

 
Then I had some nuts while watching TV
